FUDGE

397g can Carnation milk
150ml (5fl oz) milk
450g (1lb) demerara sugar
115g (4oz butter)

Grease and line a 18cm square with baking parchment

On a low flame heat all of the ingredients in a large saucepan, stirring till the sugar dissolves, it is really important to make sure all the sugar is fully dissolved

Bring the pan to the boil and simmer 10-15 mins, stirring continuously till a temperature of 116C (240F) is reached.

Take the pan off the heat, beat the mixture till thick and grainy - this can taKe up to 10 minutes.  Pour into the prepared tin and set aside to cool.  Cut into pieces and serve.


**  cooks note - use a large saucepan as it froths up, also it sometimes takes longer to go grainy so have someone standing by who can do some stirring unless you have incredibly strong muscles!

I often give fudge in little boxes for presents, it usually goes down well :)
