home made fried rice

Step 1

1.   Wash rice to get all the starch of it
2.   Put rice in boiling water, reduce to simmer.
3.   Occasionally stir rice
4.   Once rice is slightly tender (do NOT boil till soft and soggy) drain and run under cold water to cool, then drain again.
5.   Place tea towel in bowl and tip rice into bowl.
6.   leave in fridge over night.


Step 2
Now for the other bits, you can use mostly what you like, here’s mine.

1.   Boil some peas & corn, when tender, strain.
2.   Get some chicken, cook and chop into small bits
3.   You can do the same with some bits of bacon as well.


When this is done, get a large mixing bowl combine rice, peas, corn, meat and mix.

Beat a few eggs and fry or microwave them, then chop eggs and add to rice mixture.

Step 3
Get your wok, heat oil in wok and add a few scoops of rice etc, add your choice of herbs, I use garlic, coriander and oregano, use large spoon to mix and kep tossing around so it don’t burn, add soy sauce to taste.

Repeat step 3 till rice mixture is all gone

Note, slower tossing will let some of the rice brown slightly for a crunchy texture.

Sounds good as I an always leave out the animal products (i'm virtually vegan)  $%$
Certain things catch your eye, but pursue only those that capture your heart.
