This is what I made yesterday. Its simple and Vegetarian.
2 onions, chopped,
4/5 carrots chopped roughly ,
2 Courgettes, cut into chunks ( or a small marrow)
I tin chopped tomatoes ,
I vegetable stock cube, made up to half pint ,
Black pepper/ pinch of salt.
Place all vegetables in a large saucepan,add tomatoes, and stock , stir , bring to boil, cover and simmer for 20 minutes until all vegetables are soft. Blitz smooth in a blender, or leave chunky.
Its good cheap food, and very versatile, I add celery, potatoes , mushrooms, and anything in my veg rack that looks past its best. To make a huge amount, add more carrots, and four courgettes , and an extra tin of tomatoes.
It can be frozen, and keeps well for a day or two in a fridge, you can add ham/chicken or any other cooked meat to it, while re heating. I like it with chopped cooked bacon, and extra mushrooms, dry fried in a pan, than added.
Great with a good granary loaf, and lots of butter. $%$
