Title: Healthy Bean & Walnut salad

Serves 2

1 tin butter beans
1 tin kidney beans
1/4 red onion, finely chopped
1/2 cucumber, cubed
1 medium-sized tomato, diced (or equivalent in small/ cherry tomatoes, halved)
1/2 pack feta cheese, cubed
Italian herbs/ Bouquet Garni herbs
1 large handful walnuts, cut into smaller bits (not too tiny though!)
Optional: red, yellow or green pepper, cubed

Combine all ingredients in a bowl, and dress with olive oil and balsamic vinegar (or any other salad dressing).
Eat right away or serve chilled!
